Helmed by proprietors Nick & Audra Luedde and renowned St. Louis Chef Josh Galliano, The Libertine is a re-imagined neighborhood eatery that serves accesible yet ingredient driven food to the surrounding community and beyond. Backed by an All-Star team including Josh Poletti (Executive Sous Chef) Galliano displays his culinary acumen with a menu divided into three categories: Vegetable, Fish, and of course Meat — and while vegetables, fish, or meat are respectively the main stars of their categories, there are crossovers in each area so you’ll get a little bit of everything. Bread is baked daily, desserts are homemade and there are always new and rousing creations on the menu. 

The wine list, curated by General Manager Victoria Weber, features a diverse selection of small production & boutique wines with an emphasis on sustainable & biodynamic farming practices. With eclecticity, quality and affordability as hallmarks, the ever changing wine list is a proverbial playground for the novice and the expert alike.

At The Libertine beer receives its respect due. General Manager and all around bartender extraordinaire Nate Weber has hand selected a myriad of seasonally changing unique craft ales and brews representing different brewing styles from St. Louis and the globe over. At The Libertine, a brew isn’t just a brew, it’s an experience.

The cocktail menu at The Libertine returns one back to the very roots of what it once meant to enjoy a truly great drink. With an extensive & meticulously stocked bar, The Libertine’s offerings are anything but typical. Nationally acclaimed Mixologist Peter Vestinos, Nate Weber and award winning mixologist Nick Luedde have teamed up to craft modernized parlor cocktails completely from scratch. Taking pride in the creation of a cocktail menu filled with fresh ingredients sourced from local farmers, housemade cordials, bitters, and tinctures, and freshly squeezed nectars all prepared with the whimsy and precision required to hearken one back to those times of yesteryear when merrymaking was more than just a drink, it was an art form.

Nick LueddeNICK LUEDDE  | PROPRIETOR
Restaurateur, Sommelier and Mixologist Nick Luedde is a native of St. Louis, Missouri (He went to Kirkwood High School if you were wondering) and is a veteran of award winning restaurants and bars throughout Chicago and New York City for over 15 years. Luedde, an award winning  author and poet, found a second calling as a restauranteur establishing his one-of-a-kind way at some of  the nations most exclusive restaurants and bars, becoming a fixture in Chicago as well as the national culinary & bar scene at large. Luedde’s passion, creativity and commitment continue today. Nick is back home in St. Louis, Missouri with his best friend, partner and loving wife Audra, and his son Miles, at the helm of The Libertine.

Audra LueddeAUDRA LUEDDE  PROPRIETOR
Hailing from farm country in Central Illinois, Audra grew up in a large family where the culture of food and drink was a staple in and of itself. It was because of this large family, and the characters and appetites that come with it, that Audra first fell in love with the lush simplicity that is great cooking, with of course a little help from her grandmother’s Lola and Anne along the way. Audra, upon attending Illinois State University, found her way to Chicago, where she began her career first as a bartender and later Sommelier in some of the Windy City’s most prestigious wine bars and lounges—still as much as Audra loved wine she still found herself longing nostalgic about those days back home in her Grandmother’s kitchen, watching her large family devour those home cooked meals.

This longing soon got the best of her and before too long Audra found herself graduating as a Master Chef from the nationally acclaimed Kendall College for the culinary arts, working alongside her husband at the award winning The Tasting Room in Chicago. Today, after traveling the world and several restaurants later, Audra’s culinary adventure has brought her to the helm of The Libertine in St. Louis, Missouri. It’s here that Audra enjoys the opportunity to share with her guests that same lush simple food that she fell in love with as a girl, and maybe just one or two of those tricks she learned from her grandmother’s along the way.

Josh GallianoJOSH GALLIANO   |  EXECUTIVE CHEF/OWNER
Josh Galliano grew up in New Orleans along the Mississippi River where life is a little slower so one can appreciate the good times and, of course, the food. Josh attended Le Cordon Bleu London where he received the Grand Diplome. Galliano immersed himself in all things culinary related during his studies in Europe from exploring the green markets to eating at the temples of gastronomy to discovering classic artisans and their wares. It was also during this time that Josh worked at two highly critically acclaimed restaurants that helped him reach a culinary maturity. Through countless experiences at some of the world’s great restaurants including Commander’s Palace and Restaurant Daniel, Galliano has honed his skills and palate. 

Upon travelling and finding his way around the world, Josh moved to St. Louis and has quickly gone native. With many amazing farms, producers, wineries, breweries, and restaurants, Josh found his voice through food. The phenomenal community and support of St. Louis has rewarded Josh with a loyal following and awards such as ‘Food and Wine’s Best New Chef: Midwest’ and multiple nominations for the James Beard-Best Chef in the Midwest award. While constantly striving to better himself and his food, Josh instills a blend of locality, technique, creativity, and reverence for the ingredients in the dishes he creates. Now the Executive Chef of The Libertine in St. Louis, Missouri, Chef Galliano expresses his voice through approachable food that lets the ingredients speak for themselves.

Victoria MitchellVICTORIA WEBER  |  GENERAL MANAGER
Growing up on raw milk, fresh eggs and rich organic foods, Tori has always felt the importance of the food we eat and the earth it comes from. Adventurous at heart, she’s traveled the world to see food and wine in different cultures – from Florence, Italy to Vienna and most recently, an internship at GeerCrest Farms, a small organic goat dairy in the Willamette Valley. There Victoria headed the cheesemaking program, creating raw Chèvre and aged Raclettes. Victoria received most of her service education at nationally acclaimed One SixtyBlue in Chicago, where she studied under Sommelier Amy Lewis, and also met her future husband, the one and only, Nate Weber. Spontaneously moving to Saint Louis in September of 2011, Tori was uncertain what to expect from her new city, but it didn’t take her long to find a blossoming food culture, energetically growing and eager to support their community. Her first year in Saint Louis was spent as the Dining Room Manager at St Louis’ Restaurant of the Year for 2012, Home Wine Kitchen. As General Manager of The Libertine, Tori is excited to not only work equally beside her husband, but to share her knowledge of everything from service in fine dining restaurants in Chicago to digging in the dirt and fetching eggs for dinner on the farm.

Nate WeberNATE WEBER   |  GENERAL MANAGER
The Libertine’s Beer & Spirits Officianado and General Manager, Nate Weber was born and raised in Kansas City, Missouri. At the age of eighteen, Nate found his way to Chicago where he began his restaurant career at the acclaimed One Sixtyblue. It was while there that Nate met the love of his life, Victoria Weber. After a series of accolade filled years, Urban cabin fever set in and the couple moved to Silverton, Oregon where they spent their time at Geercrest Farms—a small substainably run organic goat dairy.  Upon their highly influential time in Oregon, the couple decided to settle in Saint Louis, Missouri where they reunited with colleagues Nick & Audra Luedde to become instrumental and irreplaceable fixtures at The Libertine.

Josh PolettiJOSH POLETTI  |  EXECUTIVE SOUS CHEF
Born and bred in St. Louis, Missouri. Poletti was born with a knife in his hand. From as early as Poletti can remember he found himself knee high in his families home kitchen, inquisitive and eager to help. Josh began his culinary career at nineteen years of age at Il Bel Lago where his passion for the culinary arts was first nurtured. It was this experience that brought Poletti to Portland to attend the Oregon Culinary Institute. Upon graduation Poletti returned home to St. Louis where he has been able to express himself in many acclaimed St. Louis restaurant institutions including Harvest, Araka and Monarch and Niche. Today Josh Poletti is an integral part of The Libertine family acting as Executive Sous Chef.

Head Barkeep of The Libertine, Ben Bauer was born in the year of our Lord 1986 in the Paris of Illinois: Swansea. It was shortly after this much heralded day that Ben’s family made their way to where he would spend the greater majority of his formative years in the cultural mecca that is West Lafayette, Indiana. Prior to his time at The Libertine, Ben could be found at Farmhaus Restaurant in South St. Louis where, much to the dismay of his peers, was made a manager while still bussing tables, moving quickly over to Head Bartender. Ben shortly after that made his way to open Elaia & Olio where he discovered his true passion in the craft of mixing cocktails. As the head Barkeep and stupor riddled Spirit Liaison of The Libertine, Ben currently leads all other parties in fire- starting, giving people their first Malört face and Fernet inspired trips through the macabre Disneyland that is his twistedly delicious mind. Also of note, Ben has been called by some The Don Juan of cocktails. To this suggestion Ben has put up little to no argument.

Head Server & Manager Tiffany Diering is our ‘pilot’ of The Libertine. Prior to making her way to becoming an integral part of The Libertine family Tiffany studied Aviation at Central Missouri State University where, despite her best efforts and a minor incident involving her fainting in front of her flight instructor, she decided to follow more befitting pursuits. Tiffany’s career in hospitality began at Farmhaus Restaurant in South St. Louis and then progressed to the acclaimed Home Wine Kitchen in Maplewood, Missouri where she acted as both Dining Room Manager and Private Events Coordinator. It was however, upon making her home at The Libertine, that Tiffany’s unmatched ability to bring a smile to guests’ face and a thoughtful ear to her fellow staff began to blossom. Now at The Libertine, the sky is truly the limit. In those rare moments that Tiffany is not found piloting the proverbial plane that is The Libertine she can be found at home curled up with great glass of wine with her domestic partner Tim and beloved pups Louie & Cherokee.
